Spicy Paprika Sweet Potato Chips

Chips (or fries, if you like) are a luxury I allow myself from time to time though I always roast my chips  as it's healthier than frying, and requires less effort - you just put them in the oven and shake occasionally. This recipe comes courtesy of my cousin Lucíola and it is fabulous! The trick is to coat the chips evenly in a bowl before roasting. I used one white flesh and one orange fleshed sweet potato, but you could also do this recipe with normal potatoes too.


Serves 2

Ingredients:

2 sweet potatoes
2 tbsp sunflower oil
2 tsp sweet paprika
1/2 tsp of smoked paprika (optional)
cayenne pepper/chilli powder, to taste (optional)
1/4 tsp salt


1. Preheat the oven to 200 degrees C / 390 degrees F / gas mark 6.

2. Peel sweet potatoes and slice into chip shapes.

3. In a small bowl, mix the paprika, chill powder and salt together.


4. Place the sweet potatoes into a large mixing bowl. Add the sunflower oil and shake the bowl to coat them thoroughly.

5. Add the paprika mix and shake to coat the chips evenly.


6. Transfer to a baking tray and cook for 35 - 45 minutes until cooked through and brown and crisp.
