Spicy Paprika Sweet Potato Chips

Chips (or fries, if you like) are a luxury I allow myself from time to time though I always roast my chips  as it's healthier than frying, and requires less effort - you just put them in the oven and shake occasionally. This recipe comes courtesy of my cousin LucĂ­ola and it is fabulous! The trick is to coat the chips evenly in a bowl before roasting. I used one white flesh and one orange fleshed sweet potato, but you could also do this recipe with normal potatoes too.


Serves 2

Ingredients:

2 sweet potatoes
2 tbsp sunflower oil
2 tsp sweet paprika
1/2 tsp of smoked paprika (optional)
cayenne pepper/chilli powder, to taste (optional)
1/4 tsp salt


1. Preheat the oven to 200 degrees C / 390 degrees F / gas mark 6.

2. Peel sweet potatoes and slice into chip shapes.

3. In a small bowl, mix the paprika, chill powder and salt together.


4. Place the sweet potatoes into a large mixing bowl. Add the sunflower oil and shake the bowl to coat them thoroughly.

5. Add the paprika mix and shake to coat the chips evenly.


6. Transfer to a baking tray and cook for 35 - 45 minutes until cooked through and brown and crisp.
