Roasted Halloumi and Vegetables

A pretty easy and very tasty roasted dish. I mixed this with plain cous cous to make a salad, but you could serve it hot with pasta, rice, pitta bread, wraps - basically anything you fancy. Feel free to mix up the vegetables, though I have to admit the super combo of sweet peppers, sweet potatoes and red onion really did it for me.


Serves 2-4 depending what you serve it with

Ingredients:

1 250g pack halloumi
2 sweet peppers
1 red onion
1 sweet potato
1 tsp parsley 
1/2 tsp dried mint
olive oil
salt, paprika, chilli powder (to taste)

1. Pre-heat oven to 220 degrees C/ 425 degrees F/ gas mark 7.

2. Peel and chop the sweet potato, chop the sweet peppers and red onion, and add to a roasting tray.

3. Pour a generous amount of olive oil over the top and shake to coat.

4. Sprinkle the mint and parsley over the top and shake to coat.

5. Add salt/paprika/chilli powder if desired, and put in the oven for 15 minutes.

6. Meanwhile chop the halloumi into cubes. Remove the vegetables from the oven, add the halloumi and cook for a further 20 - 30 minutes until the sweet potato are cooked through.

7. Serve with accompaniment of your choice.
