Paprika and Mustard Potato Salad

This is a very easy, tasty, potato salad to make. Beware - I used raw onion in this and the flavour packs quite a punch. If you are less keen on onion and/or have to be out somewhere around people(!), you can easily omit it from the recipe. Or, as Google once again reliably informs me, you can soak the onions in very cold water for around 10 mins before draining and adding to the recipe.



Serves 4 - 6

250g potatoes
1 red onion (optional)
2 tbsp mayonnaise
2 tsp smoked paprika (normal will do fine as a substitute)
1 tsp mustard (wholegrain or dijon work pretty well)
Dash balsamic vinegar (optional)

1. Chop potatoes (with skin on) and cook in a pan of salted water until soft.

2. Place cooked potatoes in a bowl with the onions (optional) and two tablespoons of mayonnaise. Stir to mix. Add olive oil if the consistency is too thick - this will loosen things up whilst keeping the fat content lower than just adding more mayo.





 3. Add paprika and mustard, stir to mix.





4. Finally, add a dash of balsamic vinegar, and season to taste with salt and pepper.
