Olive and Basil Feta Cheese Spread

A lovely and quick dip/sandwich filling which is super easy to make. The original recipe was double the quantity but I halved it. If you are using as a dip for a gathering, you could double the quantities below. The original recipe called for Kalamata olives but I used black olives because I am cheap, so just use any colour olive you prefer.


Ingredients:

125g cream cheese
100g feta cheese
10g fresh basil, roughly chopped
30ml (4 tbsp) olive oil
8 olives (any colour), pitted and roughly chopped

Instructions:

1. Fold cream cheese, feta, basil, and 2 tbsp of olive oil together in a bowl until thoroughly mixed.

2. Add the olives and mix through the dip. Transfer to serving dish and drizzle the remaining oil on top (note, if using as a sandwich filling, you can do this in a tupperware box to store it in the fridge).
