Goats Cheese and Basil Bread Sticks

These bread sticks are super tasty and very easy to make. I made mini bread sticks for my daughter to eat, so I have no idea how many full sized bread sticks this would make, but I would guess around 12. 




Ingredients:

180g white flour (I used half bread flour, half plain flour)
120ml warm water
1/2 tsp salt
1 tsp easy-blend dried yeast
1/2 tsp caster sugar
1 tbsp olive oil
75g hard goats cheese, grated finely
2 tsp dried basil

Instructions:

Preheat oven to 220 degrees C/435 degrees F/Gas Mark 7
Line a square baking tray with baking parchment

1. Place flour and salt in a bowl. Make a well in the centre and add the yeast, sugar, warm water and olive oil. Leave for 10 minutes.

2. Add the dried basil, and stir the mixture until it forms a wet dough. Transfer to a floured surface and knead for 10 minutes until smooth and elastic. Add as little flour as necessary, only when the dough begins to stick to the kneading surface.

3. Cover loosely with oiled cling film and leave to stand for an hour until doubled in size.

4. Split the dough mixture in half, and roll out thinly. Sprinkle half the goats cheese on top, roll back into a ball and roll out thinly again. Slice thinly and roll into thin sausage shapes. Transfer to baking tin and bake in batches for 10-15 minutes. The longer you bake them for, the crispier they will be. Repeat with the second half of the dough mixture.
