A simple, quick recipe for tasty beans. You could serve these as a side dish or - as I did - as a sandwich filling, a bit like a very simple hummus. I ate them by themselves in a sandwich with a little mayonnaise, but you could accompany them with a leafy vegetable such as baby spinach if you wished.
Serves 2
Ingredients:
1 - 2 cloves garlic (more if desired)
1 x 400g (approx) tin of cannellini beans
1/2 tsp dried rosemary
chilli flakes (optional)
salt and pepper, to taste
Instructions:
1. Crush garlic and fry in oil on a medium heat until softened.
2. Drain the beans and add to the pan along with the rosemary and chill flakes (if using).
3. Fry until heated through; some of your beans may soften/mash slightly and you may wish to deliberately mash some of them a bit (I did) to give an interesting consistency. Season with salt and pepper as desired and serve.
