Peanut Butter Cookies

I'm moving house at the moment and trying to use up all my store cupboard ingredients, and these cookies were a perfect way to use up some leftover peanut butter. I took them to a BBQ and they seemed to go down quite well. The mixture is quite soft so they are cookies (chewy) rather than biscuits (crunchy).


Makes around 24 cookies

Ingredients

140g (5oz) plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
115g (4oz) butter, at room temperature
165g (5 3/4 oz) light brown sugar
1 egg
1 teaspoon vanilla essence
265g (9 1/2 oz) peanut butter


1. Cream butter and sugar together, add the egg an beat in.

2. Add the vanilla and peanut butter and stir thoroughly.

3. Add the flour, bicarbonate of soda and salt, and stir in.

4. Put in the fridge for at least 30 minutes, but an hour would be better.

Preheat oven to 350 degrees F/180 degrees C/Gas Mark 4

5. Spoon out the mix a teaspoon at a time, roll into a ball and flatten into a biscuit shape. The mix can be quite sticky.




6. Bake for 12 - 15 minutes until cooked through.
